Easy Frugal Dinner: Baked Potato Bar

Once again, another Friday night dinner. Friday tends to be the busiest day in our house as well as one of my laziest since I’ve been working all week, the kids have been in school all week, and we all just want to relax. We can’t afford to eat out all that often and I still prefer my family to eat a wholesome meal rather than a super processed microwavable one. So here’s another of my easy, cheap, and lazy solutions:

The Potato Bar!

You will need:

  • Enough baked potatoes to feed  a hungry family (you can microwave these if you’re in a rush, but traditional oven baked worked just fine for us)
  • A variety of toppings for the potatoes. We chose:
    • some of our homemade butter
    • sour cream
    • chopped green onions
    • salsa
    • shredded cheese
    • leftover chili
    • ranch dressing
    • crumbled bacon

After you bake the potatoes and set out the ingredients on the table, everyone can choose the ingredients they want to put on their own potato. This is great for kids who tend to be less picky if they have some choices in the meal. It’s easy for mom or dad to fix up and tasty for the whole family.
