Sunday was day 3 of our 7 Day Vegetarian Challenge. Throughout the day we ate meatless meals: watermelon and yogurt for breakfast, raw broccoli, mashed potatoes, and avacado for lunch, and for dinner we tried “chik” patties, meat free “chicken” patties. We all agreed that those were pretty good and fairly close to the real thing. They were my daughter’s favorite so far.
Three days into the challenge, I have noticed some benefits. I feel less bloated and gassy while I have become more ‘regular’ (probably from an increase in my fiber intake?)
